The right click menus are defined with an xml file. You can set the xml file in gconf - look for the key /apps/awn-applet-taskmanager/menu_filename. I'd suggest copying one of the existing xml files. Remove what you don't want and then pointing the key to your custom filename.

Editing the ..taskmanager/menus/ xml files is a great step in the right direction but I really need to also be able to remove the context menu "Dock preferences" & "Quit" items from all applets & the dock itself.

I have had a look through the files within /usr/share/avant-window-navigator & gconf entries but couldn't find anything obvious.

Am I missing something else or should this become a feature request?

It is only recently that Docky has included gconf settings to disable context click access to quit & settings.
